"Homemade Chicken Enchiladas" is one of our family's favorites. I hope you enjoy it as well.
Chicken Enchiladas
- 1 Whole chicken
- 2 or 4 cans Green Salsa Verde (Depending on how hot you want them)
- 1 can Cream of Chicken Soup
- 1 carton (or more) Sour Cream
- 1 can Diced Green chiles
- 1 large Onion (diced)
- About 1 LB each Shredded Monterrey jack Cheese and Cheddar Cheese
- 1 package Flour tortillas

- Cook chicken, cool, skin, debone and cut into small pieces. Place next 5 ingredients in pan, stir and heat just enough to blend all ingredients together. Place flour tortilla on plate, spread some sauce, add chicken and cheese, then roll tortilla. Place in 9x13 casserole dish or cake pan. Continue until pan is full. Cut tortillas in half for easier serving. Pour remaining sauce over top, then cover with cheese. Garnish with half olives. Cover and bake in oven at 325 for 45 minutes to 1 hour. Uncover about last 10 minutes. (This recipe usually makes (1) 9x13 casserole plus a smaller one.)
